Description

  • 1 lb (450g) ground beef or ground turkey
  • 1 medium onion, diced
  • 2 cups beef or chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 small green bell pepper, diced
  • 1 packet taco seasoning (or 2 tbsp homemade mix)
  • Salt and pepper to taste

For Toppings:

  • Sliced avocado
  • Sour cream
  • Shredded cheddar cheese
  • Fresh cilantro, chopped
  • Tortilla chips (optional)

Instructions

  • Cook the Protein:
    • In a large pot, cook the ground beef (or turkey) over medium heat until browned. Drain any excess fat.
    • Add the diced onion and sauté for 3-4 minutes until softened.
  • Build the Soup:
    • Stir in the taco seasoning and mix well.
    • Add the beef or chicken broth, black beans, diced tomatoes, corn, and diced bell pepper. Stir to combine.
  • Simmer:
    • Bring the soup to a gentle boil, then reduce the heat to low. Cover and simmer for 15-20 minutes to allow the flavors to meld together.
  • Adjust Seasoning:
    • Taste the soup and adjust salt and pepper if needed.
  • Serve:
