- 1 cup corn kernels (fresh, canned, or frozen)
- 1 small green bell pepper, diced
- 1 packet taco seasoning (or 2 tbsp homemade mix)
- Salt and pepper to taste

- Sliced avocado
- Sour cream
- Shredded cheddar cheese
- Fresh cilantro, chopped
- Tortilla chips (optional)
Instructions
- Cook the Protein:
- In a large pot, cook the ground beef (or turkey) over medium heat until browned. Drain any excess fat.
- Add the diced onion and sauté for 3-4 minutes until softened.
- Build the Soup:
- Stir in the taco seasoning and mix well.
- Add the beef or chicken broth, black beans, diced tomatoes, corn, and diced bell pepper. Stir to combine.
- Simmer:
- Bring the soup to a gentle boil, then reduce the heat to low. Cover and simmer for 15-20 minutes to allow the flavors to meld together.
- Adjust Seasoning:
- Taste the soup and adjust salt and pepper if needed.
- Serve:
- Ladle the soup into bowls and top with sliced avocado, a dollop of sour cream, shredded cheese, and a sprinkle of cilantro. Add tortilla chips on the side for dipping, if desired.
