Instructions

  • Boil to soft-ball stage: Once boiling, reduce the heat to maintain a steady simmer. Stop stirring and allow the fudge to cook until it reaches the soft-ball stage (about 234–238°F / 112–114°C on a candy thermometer). This usually takes around 10–15 minutes.
  • Remove from heat and add butter: Carefully remove the saucepan from the heat. Add the butter on top but do not stir. Let it sit undisturbed for about 5 minutes.
  • Beat the fudge: Using a wooden spoon or an electric mixer on low speed, beat the mixture until it thickens and loses some of its gloss. This process can take about 5 minutes.
  • Add vanilla: Stir in the vanilla extract during the final minute of beating.
  • Pour and set: Quickly pour the fudge into the prepared pan and spread it evenly. Allow it to set at room temperature until firm, about 1–2 hours.
  • Slice and serve: Once fully set, cut the fudge into squares. Store in an airtight container at room temperature.
